How to Freeze Okra

Okra is a wonderful southern vegetable because it likes to be grown in hot climates. But can you freeze okra to enjoy it throughout the winter?
You certainly can. There are several methods for freezing okra, but for the purpose of this post, we are going to freeze okra plain so that you can easily use it in recipes.

How to Freeze Okra Without Breading
The method for freezing okra is actually quite simple. (You can find these directions in a printable format at the bottom of this post.)
First, choose small okra pods. Freezing will NOT improve the flavor or texture of okra, so be sure to choose tender pods, not tough, overgrown ones.
Wash the okra well and pat it dry. Slice the cap off the okra and discard. Slice the pods into slices in the size you prefer in your recipes. (I usually slice them into 1/4″ to 1/2″ slices.)
Spread the okra in a single layer on a sheet pan covered with parchment paper. If you have lots to freeze, you may need multiple pans.
Place the okra in the freezer for an hour or two. Once the okra is frozen solid, remove the okra and bag it in labeled freezer bags or freezer containers. Return to the freezer. Okra will keep in the freezer for up to one year.
How to Use Frozen Okra
Frozen okra is best when used directly from the freezer without thawing first. If you thaw it, okra may turn slimy.
To use frozen okra in soups or stews, just toss the frozen okra directly into the hot broth. If stir-frying or roasting okra, I place it in the pan while still frozen. Be aware that it may splatter a bit if you add it to a hot pan containing oil.
