How to Freeze Breaded Okra

We love fried okra around our house. It is definitely a Southern thing. But if you grow okra and want to be able to fry in during the winter, what is the best way to freeze breaded okra?
This easy recipe makes wonderful fried okra to store in the freezer and fry up all winter long.
I’m not going to give exact quantities in the recipe below because you can make as much or as little as you want.
The one thing to be sure you do, is spread the okra on a sheet pan to freeze for an hour before you bag it up. This keeps the okra from freezing in a solid clump when you go to fry it later. (You will want to fry it directly from frozen.)

How to Freeze Breaded Okra

Ingredients:
- milk
- cornmeal
- fresh okra pods
Instructions:
- First, choose small okra pods. Freezing will NOT improve the flavor or texture of okra, so be sure to choose tender pods, not tough, overgrown ones.
- Pour milk into one bowl and add some cornmeal to a second bowl. Prepare a sheet pan with a piece of parchment paper inside.
- Wash okra well. Slice the cap off the okra and discard. Slice okra into 1/4 inch pieces, directly into a bowl of milk.
- Using your hand or a slotted spoon, remove okra from the milk, a few pieces at a time. Drain for a few seconds and toss the okra into the second bowl with the cornmeal.
- Toss the okra in the cornmeal until it is fully covered.
- Remove the okra from the cornmeal and place it on the parchment-covered sheet pan. Continue with the remaining okra, being sure to keep the okra in a single layer.
- Place the pan with the okra in the freezer for an hour or two. Once the okra is frozen solid, remove the okra and bag it in freezer bags or freezer containers. Return to the freezer. Okra will keep in the freezer for up to one year.
To Fry Breaded Okra
Heat an inch of oil in a cast iron skillet. Drop in breaded okra. Be careful because it will likely splatter. Brown, stirring occasionally, until okra is golden brown. Drain on paper towels. Add salt as desired.
