Coffee Cake with Fruit Filling

This old-fashioned coffee cake has been a family favorite for many years. My Mom made it every Christmas morning when I was growing up. And I have been making it for years for my own family.
This is definitely a special occasion breakfast. But for a once-a-year holiday meal, it’s perfect. It uses ingredients you likely already have on hand in your refrigerator and pantry.
And if you happen to have a jar of home-canned pie filling it would really take this coffee cake to the next level. I love that you can make this easy coffee cake the night before and bake it the next morning.
It’s perfect for any holiday breakfast or brunch where you need something sweet. This coffee cake recipe would also make a delicious dessert for the holidays too.

Coffee Cake with Fruit Filling

Ingredients:
- 1 cup butter (2 sticks)
- 1 1/2 cups sugar
- 4 eggs
- 2 cups flour
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 can cherry pie filling
Instructions:
- Preheat oven to 350 degrees. Grease a 15″ x 10″ jelly roll pan.
- In a large mixing bowl, cream butter and sugar. Add eggs one at a time, beating well after each addition.
- Beat in flour. Then add vanilla & almond extracts.
- Spread batter into a greased pan. Using a spatula or toothpick gently mark lines in the batter to divide the batter into 15 squares.
- Drop a spoonful of cherry pie filling into the center of each square.
- Bake the coffee cake at 350 degrees for 40 to 50 minutes until the batter is set.
To Make the Coffee Cake with Fruit Filling Ahead of Time:
You can make the coffee cake (including adding the pie filling), cover it, refrigerate it overnight, and then bake it the next morning.
We do it this way every year for Christmas morning. We pop the coffee cake in the oven before opening presents and it’s ready to serve when we are done.
Coffee Cake Flavor Variations
You can use any pie filling you choose.
- Apple is great for fall or Thanksgiving.
- Blueberry is nice during the summer.
- Strawberry is fun for Valentine’s Day
- Lemon pie filling is a great option for Mother’s Day.
- Peach is also good any time of year.
