These oatmeal breakfast bars are a quick and healthy breakfast for busy mornings.

Ingredients
1/2cupbutter or coconut oilmelted
1/4cupapplesauce or an additional 1/4 cup butter or oil
3/4cuporange marmalade
4cupsquick cooking oats
1/2cupbrown sugar
1teaspoonsalt
2 to 2 1/2cupsadd-ins*
Instructions
Combine melted butter (or coconut oil), applesauce, and orange marmalade. Stir to combine. Set aside to cool briefly.
In a mixing bowl, combine oats, brown sugar, and salt. Pour marmalade mixture over oats. Mix well.
Stir in add-ins. If adding chocolate chips, be sure mixture is cool so the chips don't melt.
Press into a 10" x 15" greased baking pan. Bake at 350 for 15 minutes.
Cool completely before cutting into bars.
Notes
*Add-ins can include:
chocolate chips, white chips, butterscotch chips
chopped nuts - almonds, walnuts, pecans, or cashews
sunflower seeds
coconut
raisins or other dried fruit - dried cranberries would be delicious with the orange flavor of the marmalade
quinoa – would add additional protein
chia seeds
I try to use at least 1 cup of chopped nuts for additional protein in these bars.I line the pan with foil and then grease the foil or use parchment paper to make it easier to cut the bars. I can lift the whole batch out of the pan and then cut them on the counter.If baking a double batch, use a 12" x 18" pan and bake for 25-30 minutes.
