This is a great muffin mix to customize with any ingredients you would like. Make up several mixes and store in containers or plastic bags. Then when you need a quick breakfast or snack, it doesn't take long to mix up a batch of a dozen muffins.

Ingredients
Dry ingredients for mix:
1cupwhole wheat flour (or all-purpose flour)
3/4cupall-purpose flour
2teaspoonsbaking powder
1/4teaspoonbaking soda
1/4teaspoonsalt
1/2cupsugar
Wet ingredients to make muffins
1/4cupoil or melted butter
1/2cupmilk
1/4cupyogurt or sour cream
1egg
Additional ingredients:
1/2-1cupadd-ins*
Instructions
Combine all the dry ingredients for the mix in a plastic storage container or a quart bag and stir to mix. This will keep several months in the pantry.
To make muffins, combine all the wet ingredients in a bowl. Add the dry ingredients (mix) and stir gently until no streaks of flour remain. Fold in your add-ins. Spoon into muffin cups (each mix makes 12 muffins) and bake at 350 for 18-20 minutes.
Notes
*Add-ins could be any of the ingredients listed below. I tend to use 1/2 cup for sweet ingredients like chocolate chips, but I lean more towards a full cup if I'm using fruit. -chocolate chips -butterscotch chips -white chips and macadamia nuts -blueberries -chopped strawberries -raspberries -whatever else you can dream up!
