Ingredients
Crust
1cupflour,gluten-free works fine too
1/2cupbuttermelted
1/4cupbrown sugar
1/2cupfinely chopped almonds
Filling
1cupheavy whipping cream
1cupsugar
2egg whites,fresh or powdered
1Tablespoonlemon juice
2cupsfresh or frozen strawberrieschopped
Instructions
For crust:
Combine all crust ingredients. Spread in a 9" x 13" pan. Bake at 350° for 20-25 minutes, stirring often, until golden brown. Set aside and let cool. Remove 1/3 of mixture to reserve for topping. The mixture will be crumbly.
For filling:
Whip cream. Set aside. Wash mixer bowl and all utensils well. (If any of the cream remains, it will cause the egg whites to not whip properly.)
Beat sugar, egg whites, strawberries, and lemon juice for 20 minutes until light and fluffy. (If using a high powered mixer it may not take the full 20 minutes, but a hand mixer will.) Gently fold in cream.
Line a 9" x 13" serving dish with parchment paper. Spread 2/3 of the crust mixture in the bottom. It may not totally cover the bottom of the dish. Pour in strawberry mixture and spread to cover the crust. Top with remaining crust. Freeze for at least four hours. Cut into squares before serving. Strawberry Delight is best eaten frozen.
