A quick, frugal soup that warms you up on a cold day.
Brown ground beef with onion. Add all remaining ingredients to the slow cooker. Cook for 8 hours on low.
Alternatively, once the beef and onions have been browned, add all the remaining ingredients to the pot and simmer on the stove for 15 minutes.
Top individual servings with corn chips, cheddar cheese, sour cream and pickled jalapenos if desired.
* I use 2 Tablespoons taco seasoning mix and 2 Tablespoons ranch dressing mix in place of the store-bought packets.
